Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 1 cup Shredded sharp cheddar cheese
  • 0.5 cups Grated Parmesan cheese
  • 0.75 cups Dry white wine
  • 0.25 cups Whole milk
  • 0.25 cups Unsalted butter, melted
  • 1 whole Large egg
  • 2 tablespoons Chopped fresh chives

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners.

Step 2

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and ground black pepper. Whisk together to evenly distribute the dry ingredients.

Step 3

Stir in the shredded cheddar cheese and grated Parmesan cheese, making sure they are evenly coated with the flour mixture. This will help distribute the cheese evenly throughout the muffins.

Step 4

In a separate bowl, whisk together the white wine, milk, melted butter, and egg until well combined.

Step 5

Pour the wet ingredients into the dry ingredients. Add the chopped chives and gently fold the mixture together with a spatula until just combined. Be careful not to overmix, as this can make the muffins tough.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.

Step 7

Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. These muffins pair beautifully with a glass of white wine or as an accompaniment to a hearty soup or salad.
