Ingredients

  • 10 cups fresh spinach
  • 1 medium apple (preferably a crisp variety like Honeycrisp or Fuji)
  • 0.25 cup raisins
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water

Directions

Step 1

Wash and dry the spinach thoroughly. Set aside.

Step 2

Core and dice the apple into small, bite-sized pieces. Leave the skin on for added texture.

Step 3

Peel and finely mince the garlic cloves.

Step 4

In a large skillet, heat the olive oil over medium heat.

Step 5

Add the minced garlic and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 6

Add the diced apple to the skillet and cook for 2-3 minutes, stirring occasionally, until slightly softened.

Step 7

Add the raisins and 2 tablespoons of water to the skillet. Stir and let the mixture cook for another 1-2 minutes to allow the raisins to plump up slightly.

Step 8

Add the spinach to the skillet, a few handfuls at a time, and toss gently to combine with the apple-raisin mixture. The spinach will wilt quickly as it cooks.

Step 9

Once all the spinach has wilted (about 2 minutes), drizzle the lemon juice over the mixture and season with salt and black pepper to taste.

Step 10

Remove the skillet from the heat and transfer the wilted spinach mixture to a serving dish.

Step 11

Serve warm as a side dish or a light appetizer. Enjoy!
