Ingredients

  • 6 cups Baby spinach
  • 4 slices Bacon
  • 1 large Shallot
  • 1 clove Garlic
  • 2 tablespoons Sherry vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Slivered almonds (optional)

Directions

Step 1

Rinse the baby spinach thoroughly and pat dry with paper towels. Set aside in a large serving bowl.

Step 2

In a skillet over medium heat, cook the bacon until crisp. Remove the bacon to a paper towel-lined plate and crumble once cooled. Reserve 2 tablespoons of the bacon drippings in the skillet.

Thinly slice the shallot and mince the garlic. Add them to the skillet with the bacon drippings and sauté over medium heat until translucent and fragrant, about 2-3 minutes.
