Ingredients

  • 8 cups fresh spinach
  • 6 slices bacon
  • 0.5 red onion
  • 3 tablespoons white vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 hard-boiled eggs

Directions

Step 1

Rinse the fresh spinach well under cold water, pat it dry with a paper towel, and place it into a large salad bowl.

Slice the red onion thinly and add it to the spinach in the bowl.

Cook the bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet, place it on a paper towel to drain, and crumble it once cooled.
