Ingredients

  • 8 cups Fresh spinach
  • 6 slices Bacon
  • 0.5 whole Red onion
  • 2 cloves Garlic
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the spinach thoroughly and pat it dry with paper towels. Set it aside in a large salad bowl.

Slice the red onion into thin strips and mince the garlic.

Step 3

In a large skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Remove the bacon from the skillet and place it on a plate lined with paper towels. Once cooled, crumble the bacon into small pieces.

Carefully pour off most of the bacon drippings from the skillet, leaving about 2 tablespoons in the pan.
