Ingredients

  • 6 cups Spinach leaves
  • 2 large Avocado
  • 6 slices Bacon
  • 0.5 small Red onion
  • 3 tablespoons White vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the spinach leaves. Place them in a large salad bowl.

Step 2

Slice the avocados in half, remove the pits, and scoop the flesh out. Slice the avocado thinly and arrange on top of the spinach.

Thinly slice the red onion and add to the salad bowl.

Cook the bacon slices in a skillet over medium heat until they are crispy. Remove the bacon from the skillet and place on paper towels to drain. Reserve about 3 tablespoons of the bacon grease in the skillet for the dressing.
