Ingredients

  • 6 cups (shredded) Green cabbage
  • 1 cup (shredded) Carrots
  • 1 small (thinly sliced) White onion
  • 0.5 cup Apple cider vinegar
  • 0.25 cup Granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Vegetable oil
  • 0.5 teaspoon Celery seed

Directions

Step 1

In a large mixing bowl, combine the shredded cabbage, shredded carrots, and sliced onion. Toss to mix evenly and set aside.

Step 2

In a small saucepan, combine the apple cider vinegar, sugar, Dijon mustard, salt, and black pepper. Stir well and heat over medium heat until the mixture comes to a gentle simmer, allowing the sugar to dissolve completely.

Step 3

Once the sugar is dissolved, pour in the vegetable oil and add the celery seed. Stir to combine and heat for another 1-2 minutes until the dressing is hot but not boiling.

Step 4

Remove the dressing from heat and immediately pour it over the cabbage, carrots, and onion mixture in the bowl.

Step 5

Using tongs or a large spoon, gently toss the vegetables with the hot dressing until everything is well-coated and the cabbage begins to wilt slightly.

Step 6

Allow the coleslaw to sit for about 5 minutes to further absorb the flavors. Serve warm or at room temperature as a side dish.
