Ingredients

  • 1 head Green cabbage
  • 0.5 head Red cabbage
  • 2 large Carrots
  • 1 small Red onion
  • 0.75 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Honey
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh cilantro (optional)

Directions

Step 1

Remove the outer leaves from the green and red cabbages. Slice both cabbages finely using a sharp knife, mandoline slicer, or food processor. Place the shredded cabbage in a large mixing bowl.

Step 2

Peel and grate the carrots. Add them to the bowl with the cabbage.

Step 3

Peel and thinly slice the red onion into slivers. Add the onion to the cabbage and carrot mixture.

Step 4

In a small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, smoked paprika, ground cumin, salt, and black pepper until smooth and well combined.

Step 5

Pour the dressing over the cabbage mixture. Toss thoroughly to coat all the vegetables evenly in the dressing.

Step 6

If using, sprinkle the chopped fresh cilantro over the coleslaw and gently mix it in.

Step 7

Cover the coleslaw and refrigerate for at least 1 hour before serving to allow the flavors to meld. Serve chilled.
