  • 1 cup frozen corn
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 cup fresh cilantro, chopped (optional for garnish)
  • 0.5 cup sour cream (optional for topping)
  • 0.5 cup shredded cheddar cheese (optional for topping)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper, then add them to the pot. Cook for about 6-8 minutes per side, or until fully cooked. Remove the chicken from the pot and set aside.
