Ingredients

  • 1 cup wild rice
  • 2.5 cups vegetable broth
  • 2 tablespoons olive oil

  • 4 ounces shiitake mushrooms

  • 2 tablespoons parsley, chopped

Directions

Step 1

Rinse the wild rice under cold running water and drain well.

In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed wild rice, reduce the heat to low, cover, and let it simmer for 40-45 minutes or until tender and most of the liquid is absorbed.
