Ingredients

  • 1 cup Wild rice
  • 3 cups Water
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 1 large Yellow onion
  • 1 teaspoon Sugar
  • 1 cup Dried cranberries
  • 2 tablespoons Fresh parsley (optional, for garnish)
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Rinse the wild rice in a fine mesh strainer under cold water to remove any excess starch.

Step 2

In a medium saucepan, bring 3 cups of water and 1 teaspoon of salt to a boil. Add the rinsed wild rice and reduce the heat to low.

Step 3

Cover and simmer the wild rice for 40-45 minutes, or until the grains are tender and some have burst open. Drain any excess water and set the rice aside.

While the rice cooks, prepare the caramelized onions. Peel and thinly slice the yellow onion into half-moons.

Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium-low heat.

Add the sliced onions to the skillet and sprinkle with 1 teaspoon of sugar. Stir well to coat the onions.

Cook the onions slowly, stirring occasionally, for 20-25 minutes, or until they are golden brown and caramelized. Be careful not to let them burn.
