Ingredients

  • 1 cup Wild rice
  • 2.5 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 2 Celery stalks, finely chopped
  • 0.5 cup Dried apricots, chopped
  • 0.5 cup Pecans, toasted and roughly chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the wild rice under cold water in a fine mesh sieve.

Step 2

In a medium saucepan, combine the rinsed wild rice and vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to low and cover. Simmer for 40-45 minutes, or until the rice is tender and the liquid is absorbed. If any liquid remains, drain it off.

While the rice cooks, heat the olive oil in a large skillet over medium heat.

Add the chopped onion and celery to the skillet and sauté for about 5 minutes, or until the vegetables are softened.
