Ingredients

  • 1 cup wild rice
  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 2 large carrots, diced
  • 1 cup mushrooms, sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Rinse the wild rice thoroughly under cold water and set aside.

Step 2

In a skillet over medium heat, brown the ground beef until fully cooked, breaking it into crumbles. Drain any excess grease.

Step 3

Transfer the cooked ground beef to the crock pot.

Step 4

In the same skillet, sauté the diced onion, celery, and carrots for 3–5 minutes, until slightly softened. Add the mushrooms and cook for another 2 minutes.

Step 5

Transfer the sautéed vegetables to the crock pot.

Step 6

Add the rinsed wild rice, cream of mushroom soup, cream of chicken soup, and chicken broth to the crock pot.

Step 7

Stir in the garlic powder, thyme, salt, and black pepper until evenly combined.

Step 8

Cover the crock pot with the lid and cook on low heat for 5–6 hours, or on high heat for 3–4 hours, until the wild rice is tender.

Step 9

Stir the dish before serving and adjust seasoning if necessary.

Step 10

Serve warm, garnished with chopped parsley if desired.
