  • 4 pieces Chicken breasts
  • 1 cup Wild rice
  • 2.5 cups Chicken broth
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 3 pieces Garlic cloves
  • 2 medium Carrots
  • 2 pieces Celery stalks
  • 1 teaspoon Dried thyme
  • 0.5 teaspoons Dried rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Rinse the wild rice under cold water in a fine mesh sieve and set aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium heat.

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Sear the chicken in the hot skillet, about 3-4 minutes per side, until golden brown. Remove the chicken and set aside on a plate.

Finely dice the onion, mince the garlic cloves, and chop the carrots and celery into small pieces.
