  • 1 cup wild rice
  • 2.5 cups water
  • 2 tablespoons olive oil
  • 1 pound ground sausage (mild or spicy)
  • 1 yellow onion, diced
  • 2 celery stalks, diced
  • 1 carrot, diced
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 0.5 teaspoons dried thyme
  • 0.5 teaspoons dried sage
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the wild rice thoroughly under cold water, then drain it.

Step 2

In a medium saucepan, bring 2.5 cups of water to a boil. Add the wild rice, lower the heat to a simmer, and cover with a lid. Cook for 35-40 minutes, or until the rice is tender and most of the water is absorbed. Drain any excess water and set the rice aside.

Step 3

While the rice is cooking, heat a large skillet over medium heat. Add 1 tablespoon of olive oil, followed by the ground sausage. Break the sausage into smaller pieces with a wooden spoon and cook until browned, about 7-10 minutes. Transfer the cooked sausage to a plate lined with paper towels to drain any excess grease.

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the diced onion, celery, and carrot over medium heat for 5-7 minutes, or until they are softened.
