  • 0.75 cup wild rice, uncooked
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil and butter in a large pot over medium heat until the butter is melted.

Add the diced onion and sauté for 3-4 minutes until softened and translucent.
