  • 2 medium shallots, finely chopped
  • 2 cloves garlic cloves, minced
  • 1 tablespoon fresh thyme leaves
  • 50 milliliters dry white wine
  • 50 milliliters heavy cream (optional)
  • 0 to taste salt
  • 0 to taste freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Clean the wild mushrooms by gently brushing off dirt using a soft brush or damp paper towel; avoid rinsing them under water to prevent sogginess. Cut larger mushrooms into bite-sized pieces, leaving smaller ones whole.

Step 2

In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat until melted.

Step 3

Add the chopped shallots to the pan and sauté for 2 minutes until translucent, then add the minced garlic and sauté for another 30 seconds until fragrant.

Increase the heat to medium-high and add the mushrooms to the skillet. Let them cook undisturbed for 3-4 minutes to develop a golden crust, then stir and cook for another 5 minutes until tender and slightly caramelized.
