Ingredients

  • 450 g wild mushrooms (such as chanterelles, shiitake, oyster, or cremini)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper, freshly ground
  • 60 ml dry white wine (optional)
  • 1 tsp lemon juice

Directions

Step 1

Clean the wild mushrooms by gently brushing off dirt with a damp paper towel. Avoid washing them directly under water as this can make them soggy. Slice larger mushrooms into bite-sized pieces.

Step 2

Heat a large skillet over medium-high heat. Add the butter and olive oil, allowing the butter to melt completely.

Step 3

Add the minced garlic to the skillet and sauté for 30 seconds or until fragrant, stirring often to prevent burning.

Step 4

Increase the heat to high and add the mushrooms to the skillet. Spread them out in an even layer to allow for even cooking.

Cook the mushrooms for 6–8 minutes, stirring occasionally, until they release their moisture and begin to caramelize and brown.
