Ingredients

  • 300 grams wild mushrooms (such as chanterelles, porcini, or cremini)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 medium shallots, finely chopped
  • 2 cloves garlic cloves, minced
  • 1 teaspoon fresh thyme leaves
  • 60 milliliters dry white wine
  • 2 tablespoons sour cream or crème fraîche
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 1 batch crostini or crackers (for serving)

Directions

Step 1

Clean the wild mushrooms using a damp paper towel to remove any dirt. Chop them into small pieces.

Step 2

Heat a large skillet over medium heat. Add the unsalted butter and olive oil, allowing the butter to melt.

Step 3

Add the finely chopped shallots to the skillet and sauté for 2-3 minutes until softened.

Step 4

Stir in the minced garlic and thyme leaves, cooking for an additional 1 minute until fragrant.

Step 5

Add the chopped mushrooms to the skillet and stir well to coat them with the butter and oil. Cook for 10-12 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.

Step 6

Deglaze the skillet by pouring in the dry white wine. Stir and cook for 2-3 minutes, allowing the wine to evaporate.

Step 7

Remove the skillet from heat and allow the mixture to cool slightly.

Step 8

Transfer the mushroom mixture to a food processor. Add the sour cream (or crème fraîche), parsley, lemon juice, salt, and black pepper.

Step 9

Pulse the mixture a few times until you achieve a coarse paste. Be careful not to over-process; you want to retain some texture.

Step 10

Taste and adjust seasoning if needed, adding more salt, pepper, or lemon juice to your liking.

Step 11

Transfer the Wild Mushroom Caviar to a serving bowl. Garnish with additional chopped parsley if desired.

Step 12

Serve with crostini or crackers as an appetizer. Enjoy!
