Ingredients

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1.5 pounds wild mushrooms (e.g., cremini, shiitake, oyster), roughly chopped
  • 0.5 cups dry white wine
  • 4 cups vegetable stock
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme, chopped
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons freshly ground black pepper
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, melt the butter with the olive oil over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and sauté for another minute until fragrant.

Step 4

Add the chopped wild mushrooms and cook for about 8-10 minutes, stirring occasionally, until the mushrooms release their liquid and begin to brown.

Step 5

Pour in the white wine and deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes until slightly reduced.

Step 6

Stir in the vegetable stock, thyme, and bay leaf. Bring the mixture to a gentle boil, then reduce the heat to low and simmer uncovered for 20 minutes.

Step 7

Remove the bay leaf and carefully blend the soup using an immersion blender until smooth. Alternatively, you can transfer the soup in batches to a countertop blender and puree it.

Step 8

Return the soup to the pot (if using a countertop blender) and stir in the heavy cream. Cook for an additional 5 minutes over low heat, but do not let it boil.

Step 9

Season the bisque with salt and freshly ground black pepper to taste.

Step 10

Ladle the soup into bowls and garnish with chopped fresh parsley, if desired. Serve warm.
