Ingredients

  • 3 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 large Egg
  • 0.5 cup Sour cream
  • 0.5 cup Water
  • 2 large Potatoes
  • 1 cup Shredded cheddar cheese
  • 2 medium Jalapeño peppers
  • 2 tablespoons Butter
  • 0.25 cup Hot sauce
  • 2 stalks Green onions
  • 2 tablespoons Vegetable oil

Directions

Step 1

In a large mixing bowl, combine the flour and salt. Create a well in the center and add the egg, sour cream, and water. Mix until a soft dough forms.

Step 2

Turn the dough onto a lightly floured surface and knead for 5–6 minutes until smooth. Cover with a damp cloth and let it rest for 20 minutes.

Step 3

Peel and cube the potatoes. Boil them in a pot of salted water until tender, about 15 minutes. Drain and mash the potatoes until smooth.

Step 4

Finely chop the jalapeños and slice the green onions. Add the jalapeños, cheddar cheese, and a tablespoon of butter to the mashed potatoes. Mix until well combined. Adjust salt to taste.

Roll out the dough on a floured surface to about 1/8-inch thickness. Use a 3-inch round cutter or a glass to cut circles from the dough.

Step 6

Place a tablespoon of the filling in the center of each circle. Fold the dough over the filling to form a half-moon shape. Pinch the edges tightly to seal.

Step 7

In a large skillet, heat the vegetable oil and the remaining tablespoon of butter over medium heat. Fry the perogies in batches until golden and crispy, about 2–3 minutes per side.
