  • 1 cup White rice (long-grain)
  • 4 cups Water
  • 1 teaspoon Salt
  • 0.5 cup Dried cherries
  • 0.5 cup Dried apricots (chopped)
  • 0.5 cup Pecans (halved or roughly chopped)
  • 2 tablespoons Butter or olive oil
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the wild rice and white rice under cold water until the water runs clear. This helps remove excess starch.

Step 2

In a medium saucepan, bring 2 cups of water and 1/2 teaspoon of salt to a boil. Add the wild rice, reduce the heat to low, cover, and simmer for about 35-40 minutes, or until the wild rice is tender and most of the grains have split open. Drain off any excess water.

While the wild rice is cooking, prepare the white rice. In another saucepan, bring the remaining 2 cups of water and 1/2 teaspoon of salt to a boil.
