Ingredients

  • 400 grams Wild Alaska salmon (canned or fresh, cooked and flaked)
  • 120 grams Panko breadcrumbs
  • 1 large Egg
  • 45 grams Mayonnaise
  • 15 grams Dijon mustard
  • 1 clove Garlic (minced)
  • 10 grams Fresh dill (chopped)
  • 5 grams Salt
  • 3 grams Black pepper
  • 30 ml Olive oil (for frying)
  • 100 grams Mesclun greens (mixed salad greens)
  • 30 ml Rice vinegar
  • 15 ml Soy sauce
  • 10 grams Wasabi paste
  • 15 ml Honey
  • 10 ml Sesame oil
  • 5 grams Ginger (grated)

Directions

Step 1

In a large mixing bowl, combine the flaked wild Alaska salmon, panko breadcrumbs, egg, mayonnaise, Dijon mustard, minced garlic, chopped dill, salt, and pepper. Mix until well incorporated.

Step 2

Divide the salmon mixture into 4 equal portions and shape each portion into a patty about 1.5 cm thick. Set aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Cook the patties for 3–4 minutes per side, or until golden brown and cooked through. Remove from the skillet and drain on a plate lined with paper towels.

Step 4

In a small bowl, whisk together the rice vinegar, soy sauce, wasabi paste, honey, sesame oil, and grated ginger to create the vinaigrette.
