Ingredients

  • 6 slices thick-cut bacon
  • 1 large yellow onion
  • 2 cloves garlic
  • 4 cups canned navy beans
  • 1 cup BBQ sauce
  • 0.5 cup ketchup
  • 0.25 cup dark brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cayenne pepper
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large oven-safe skillet or Dutch oven, cook the bacon over medium heat until crispy, about 8-10 minutes. Remove and set it aside on a paper towel-lined plate to drain.

Step 3

Chop the onion and mince the garlic while the bacon cooks.

Step 4

In the same skillet with the bacon drippings, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute, stirring frequently.

Step 5

Stir in the navy beans, BBQ sauce, ketchup, brown sugar, apple cider vinegar, Dijon mustard, smoked paprika, cayenne pepper, black pepper, salt, and water. Mix well to combine.

Step 6

Crumble the cooked bacon and stir it into the bean mixture.

Step 7

Bring the mixture to a simmer over medium heat, then remove from heat.

Step 8

Transfer the skillet to the preheated oven (or pour the mixture into an oven-safe dish if using a regular skillet). Bake, uncovered, for 45 minutes or until the sauce is bubbly and thickened.

Step 9

Remove the skillet from the oven and let the beans rest for 5-10 minutes before serving.

Step 10

Serve warm, garnished with additional crumbled bacon or chopped parsley if desired.
