Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Unsweetened cocoa powder
  • 1.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 1 cups Granulated sugar
  • 1 whole Large egg
  • 1 teaspoons Vanilla extract
  • 1 cups Buttermilk
  • 2 whole Egg whites
  • 1.5 cups Granulated sugar (for frosting)
  • 0.25 cups Cold water
  • 0.25 teaspoons Cream of tartar
  • 1 teaspoons Vanilla extract (for frosting)

Directions

Step 1

Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

Step 3

In a large bowl, use a hand or stand mixer to cream the butter and sugar until light and fluffy, about 2-3 minutes.

Step 4

Beat in the egg and vanilla extract until fully incorporated.

Step 5

Reduce mixer speed to low, and alternately add the dry ingredients and buttermilk in three additions, starting and ending with the dry ingredients. Mix just until combined, without overmixing.

Step 6

Using a cookie scoop or tablespoon, drop 2-tablespoon-sized dollops of batter onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the cookies spring back when gently pressed in the center.

Step 8

Let the cookies cool completely on wire racks before assembling.

Step 9

To make the 7-minute frosting, combine the egg whites, sugar, water, and cream of tartar in a heatproof bowl or the metal bowl of a stand mixer.

Step 10

Set the bowl over a pot of simmering water (double boiler method), ensuring the bottom of the bowl does not touch the water.

Step 11

Use a hand mixer or a whisk to beat the mixture constantly over medium heat until it becomes thick, glossy, and holds stiff peaks, about 7 minutes.

Step 12

Remove the bowl from the heat, add the vanilla extract, and continue beating for 1-2 minutes until the frosting is smooth and fluffy.

Step 13

To assemble, pair up the cookies that are similar in size. Spread a generous dollop of frosting on the flat side of one cookie and sandwich it with the flat side of its pair.

Step 14

Repeat until all cookies are assembled. Serve immediately or store in an airtight container at room temperature for up to 2 days.
