Ingredients

  • 2 cups Rolled oats
  • 1 cup Chopped walnuts
  • 1 cup Sunflower seeds
  • 0.33 cup Honey
  • 0.33 cup Peanut butter
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.25 cup Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving extra hanging over the sides for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, chopped walnuts, sunflower seeds, ground cinnamon, and salt. Stir to evenly distribute.

Step 3

In a small saucepan over low heat, melt the coconut oil, peanut butter, and honey together, stirring occasionally until smooth. Remove from heat and mix in the vanilla extract.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Stir everything together until well combined.

If using mini chocolate chips, allow the mixture to cool slightly before folding them in to prevent melting.

Transfer the mixture into the prepared baking pan and press it down firmly and evenly using the back of a spatula or your hands.

Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden brown.

Remove from the oven and allow the pan to cool completely at room temperature, then place it in the refrigerator for at least 1 hour to set.

Once set, lift the granola block out of the pan using the parchment paper overhang. Slice it into 12 bars using a sharp knife.

Store the granola bars in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 2 weeks.
