Ingredients

  • 4 cups Mixed berries (blueberries, raspberries, blackberries, or strawberries)
  • 3 tablespoons Honey or maple syrup
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 1 cup Old-fashioned rolled oats
  • 1 cup Almond flour
  • 0.333 cup Brown sugar
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 0.333 cup Coconut oil (melted) or butter
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.

Step 2

In a large mixing bowl, combine the mixed berries, honey or maple syrup, lemon juice, and cornstarch. Stir gently until the berries are evenly coated, then pour the mixture into the prepared baking dish.

Step 3

In a separate mixing bowl, prepare the topping by combining the rolled oats, almond flour, brown sugar, cinnamon, and salt. Mix well.

Step 4

Pour the melted coconut oil (or butter) and vanilla extract into the dry topping mixture. Stir until crumbs form and the mixture is evenly moistened.

Step 5

Sprinkle the oat topping evenly over the berry mixture in the baking dish.

Step 6

Place the dish in the preheated oven and bake for 35-40 minutes, or until the berries are bubbling and the topping is golden brown.

Step 7

Remove from the oven and let the crisp cool for 5-10 minutes before serving.

Step 8

Serve warm as is, or pair with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat!
