Ingredients

  • 300 g wholemeal flour
  • 100 g plain flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 75 g grated cheddar cheese
  • 1 small finely chopped onion
  • 300 ml buttermilk
  • 50 ml milk
  • 1 tbsp olive oil or melted butter
  • 25 g optional extra grated cheese for topping

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the wholemeal flour, plain flour, baking soda, and salt. Mix well to evenly distribute the dry ingredients.

Step 3

Stir in the grated cheddar cheese and finely chopped onion, ensuring they are evenly coated in the flour mixture.

Step 4

Make a well in the center of the dry ingredients and pour in the buttermilk, milk, and olive oil or melted butter.

Step 5

Using a wooden spoon or your hands, gently mix the wet and dry ingredients together until they form a shaggy dough. Avoid overmixing as this can make the bread dense.

Step 6

Turn the dough out onto a lightly floured surface and shape it into a round loaf, about 2 inches (5 cm) thick.

Step 7

Place the loaf onto the prepared baking sheet and use a sharp knife to cut a deep cross (about 1 inch or 2.5 cm deep) into the top of the bread. This helps it bake evenly.

Step 8

If desired, sprinkle the top of the loaf with extra grated cheese for added flavor.

Step 9

Bake the bread in the preheated oven for 30-35 minutes, or until the crust is golden brown and the bottom sounds hollow when tapped.

Step 10

Allow the bread to cool slightly on a wire rack before slicing and serving. Enjoy warm or at room temperature.
