Ingredients

  • 250 grams Wholemeal flour
  • 50 grams Plain flour (all-purpose)
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 75 grams Unsalted butter (cold, cubed)
  • 100 grams Dried fruit (such as raisins, currants, or chopped apricots)
  • 150 grams Greek yoghurt (plain, full-fat)
  • 2 tablespoons Honey
  • 2 tablespoons Milk
  • 1 Egg (for glazing, optional)

Directions

Step 1

Preheat your oven to 200°C (400°F) or 180°C (350°F) if using a fan oven. Line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the wholemeal flour, plain flour, baking powder, and salt.

Step 3

Add the cold, cubed unsalted butter to the dry ingredients. Using your fingertips, rub the butter into the flour mixture until it resembles breadcrumbs.

Stir in the dried fruit, ensuring it is evenly distributed throughout the mixture.

In a separate bowl, whisk together the Greek yoghurt and honey until smooth. Add this wet mixture to the dry ingredients and mix gently to form a soft dough. If the dough feels too dry, add the milk one tablespoon at a time until it comes together.

For a golden finish, beat the egg and lightly brush the tops of the scones. This step is optional.

Bake in the preheated oven for 15 to 18 minutes, or until the scones have risen and are golden brown.

Transfer to a wire rack to cool slightly. Serve warm or at room temperature with a dollop of yoghurt or a spread of butter.
