  • 1 cup Whole wheat flour
  • 0.25 cup All-purpose flour
  • 1.25 cups Milk (preferably whole milk, warmed)
  • 3 large Eggs
  • 2 tablespoons Unsalted butter (melted)
  • 0.5 teaspoons Salt
  • 1 as needed Cooking spray or softened butter

Directions

Step 1

Preheat your oven to 450°F (232°C). Ensure the oven rack is positioned in the lower third of the oven to prevent the tops of the popovers from burning.

Step 2

Generously grease a 6-cup popover pan or a standard muffin tin with cooking spray or softened butter to prevent sticking.

Step 3

In a medium-sized mixing bowl, whisk together the whole wheat flour, all-purpose flour, and salt until well combined.

In another bowl, lightly beat the eggs. Gradually whisk in the warm milk until the mixture is smooth and slightly frothy.

Step 5

Slowly pour the wet ingredients into the dry ingredients, whisking continuously until a smooth batter forms. Be careful not to overmix.
