Ingredients

  • 2 cups Whole wheat flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 1 cup Milk
  • 0.5 cup Pure maple syrup
  • 0.25 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 0.25 cup Coconut oil (melted) or vegetable oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups with non-stick spray.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, baking powder, salt, and ground cinnamon until evenly combined.

Step 3

In a separate bowl, beat the egg lightly, then add the milk, maple syrup, applesauce, vanilla extract, and melted coconut oil. Mix until well combined.

Step 4

Make a well in the center of the dry ingredients and pour the wet ingredients into it. Gently stir until just combined. Do not overmix; a slightly lumpy batter is okay.
