  • 2 cups Pitted dates
  • 1 cup Water
  • 1 teaspoon Vanilla extract
  • 1 cup Whole wheat flour
  • 1 cup Rolled oats
  • 0.5 cup Brown sugar
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter (cold, cubed)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan and line it with parchment paper, leaving an overhang for easy removal.

Step 2

In a small saucepan, combine the pitted dates and water. Cook over medium heat, stirring occasionally, until the dates soften and break down into a thick paste, about 5-7 minutes.

Step 3

Remove the date mixture from heat and stir in the vanilla extract. Set aside to cool.

In a large mixing bowl, whisk together the whole wheat flour, rolled oats, brown sugar, baking soda, and salt.

Add the cold, cubed unsalted butter to the dry ingredients. Use your fingers or a pastry cutter to work the butter into the mixture until crumbly and evenly distributed.
