Ingredients

  • 2.5 cups Whole wheat flour
  • 1 cup All-purpose flour
  • 3 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Instant yeast
  • 6 tablespoons Unsalted butter
  • 0.75 cup Milk
  • 0.25 cup Water
  • 1 large Egg
  • 2 tablespoons Butter (for brushing, optional)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, granulated sugar, salt, and instant yeast.

Step 2

In a small saucepan, combine 6 tablespoons of butter, milk, and water. Heat over medium-low heat until the butter is melted and the mixture is warm (about 110°F).

Step 3

Pour the warm liquid mixture into the dry ingredients. Add the egg and mix until a rough dough forms.

Step 4

Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until the dough becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.

Step 5

Place the dough in a greased bowl, cover with a damp kitchen towel or plastic wrap, and let it rise in a warm place for 1 to 1.5 hours, or until it doubles in size.

Step 6

Once the dough has risen, punch it down to release air. Turn it onto a lightly floured surface and roll it into a circle about 12 inches in diameter.

Step 7

Use a sharp knife or pizza cutter to divide the dough into 16 equal wedges (like slicing a pizza).

Step 8

Starting from the wide end of each wedge, roll the dough tightly toward the point, forming a crescent shape. Place each roll, point-side down, on a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Step 9

Cover the rolls with a towel and let them rise again for 30-45 minutes, or until puffy.

Step 10

Preheat your oven to 375°F (190°C). If desired, brush the tops of the rolls with 2 tablespoons of melted butter before baking for a golden finish.

Step 11

Bake the rolls for 12-15 minutes, or until they are golden brown and cooked through.

Step 12

Remove from the oven and let cool slightly before serving. Enjoy your freshly baked whole wheat crescent rolls!
