Ingredients

  • 1 cup Whole wheat couscous
  • 1.25 cups Water or vegetable broth
  • 0.5 teaspoons Salt
  • 2 tablespoons Olive oil
  • 3 whole Plums
  • 4 ounces Goat cheese
  • 0.25 cups Fresh mint leaves
  • 1 tablespoon Honey
  • 1 tablespoon Fresh lemon juice
  • 0.25 teaspoons Black pepper

Directions

Step 1

In a medium saucepan, bring the water or vegetable broth to a boil. Add the salt and 1 tablespoon of olive oil.

Step 2

Remove the saucepan from the heat, stir in the whole wheat couscous, cover with a lid, and let it sit for 5 minutes.

Step 3

While the couscous is cooking, pit and slice the plums into thin wedges. Crumble the goat cheese into bite-sized pieces. Chop the fresh mint leaves finely.

Step 4

Once the couscous has absorbed all the liquid, fluff it with a fork to separate the grains.

Step 5

In a large bowl, combine the couscous, sliced plums, goat cheese, and chopped mint.

Step 6

In a small bowl, whisk together the remaining 1 tablespoon of olive oil, honey, lemon juice, and black pepper to make the dressing.

Step 7

Pour the dressing over the couscous mixture and toss gently to combine, ensuring the plums and goat cheese are evenly distributed.

Step 8

Serve immediately at room temperature, or chill in the refrigerator for 30 minutes for a cold salad. Garnish with extra mint leaves, if desired.
