Ingredients

  • 1.5 cups Whole wheat flour
  • 0.75 cups Pumpkin puree
  • 0.5 cups Unsalted butter
  • 0.5 cups Brown sugar
  • 0.25 cups Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Pumpkin pie spice
  • 1 teaspoon Cinnamon
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1 cup Chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the whole wheat flour, pumpkin pie spice, cinnamon, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Mix in the egg, followed by the vanilla extract and pumpkin puree. Stir until well combined.

Step 5

Gradually add the dry ingredients into the wet ingredients, stirring just until combined. Be careful not to overmix.

Step 6

Fold in the chocolate chips to evenly distribute them throughout the dough.

Step 7

Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may still look slightly underbaked, but they will set as they cool.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve and enjoy your soft and flavorful whole wheat chocolate chip pumpkin cookies!
