Ingredients

  • 1.5 cups Whole wheat flour
  • 2 tablespoons Flaxseed meal
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 1.5 cups Milk (dairy or non-dairy)
  • 2 large Eggs
  • 1.5 tablespoons Maple syrup or honey
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Unsalted butter (melted) or neutral oil (e.g., coconut or canola oil)
  • 1 as needed Cooking spray or additional butter

Directions

Step 1

In a large mixing bowl, whisk together the whole wheat flour, flaxseed meal, baking powder, and salt until well combined.

Step 2

In a separate medium bowl, whisk the eggs until frothy. Add the milk, maple syrup or honey, vanilla extract, and melted butter or oil, and whisk until fully incorporated.

Step 3

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; it’s fine if the batter still has a few lumps.

Step 4

Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with cooking spray or a small amount of butter to prevent sticking.

Step 5

Spoon or pour an appropriate amount of batter onto the preheated waffle iron (amount depends on the size of your waffle iron). Close the lid and cook until the waffle is golden brown and crisp, approximately 4-5 minutes or until your waffle maker signals it is done.

Step 6

Carefully remove the waffle and place it on a wire rack to prevent sogginess while you cook the remaining batter. Repeat the process, greasing the waffle iron as needed between batches.

Step 7

Serve the waffles warm with your favorite toppings such as fresh fruit, yogurt, maple syrup, or nuts.
