  • 2 cups whole wheat flour

  • 0.75 cups granulated sugar
  • 4 tablespoons unsalted butter
  • 2 large eggs
  • 1.5 teaspoons vanilla extract
  • 0.5 teaspoons almond extract
  • 1 cup whole almonds, toasted and roughly chopped

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a medium bowl, whisk together the whole wheat flour, baking powder, and salt. Set aside.

Step 3

Using a stand mixer or a hand mixer in a large bowl, cream the butter and granulated sugar together until the mixture is light and fluffy, about 2–3 minutes.

Add the eggs, one at a time, mixing well after each addition. Then, beat in the vanilla extract and almond extract.

Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. You may need to switch to a spatula or wooden spoon as the dough becomes thick.
