Ingredients

  • 2 pieces whole trout
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 tablespoons unsalted butter
  • 0.5 cup sliced almonds
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley
  • 2 tablespoons olive oil

Directions

Step 1

Rinse the whole trout under cold running water and pat them dry with paper towels. Remove any remaining scales or bones, if necessary.

Step 2

Season the inside of the trout with a pinch of salt and black pepper.

Step 3

In a shallow dish, combine all-purpose flour, salt, and black pepper. Dredge the trout in the flour mixture, shaking off any excess.

Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat.

Place the floured trout in the skillet and cook for 5-6 minutes per side, or until the skin is crispy and the fish is cooked through. Remove the trout from the skillet and place on a serving platter. Keep warm.
