Ingredients

  • 1.5 lb whole red snapper (cleaned and scaled)

  • 2 tbsp unsalted butter
  • 2 tbsp chopped parsley
  • 2 tbsp white wine

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper.

Step 2

Rinse the red snapper under cold water and pat it dry with paper towels. Make 3-4 diagonal slashes on each side of the fish using a sharp knife.

Step 3

Rub the red snapper with 2 tablespoons of olive oil, 1 teaspoon of kosher salt, 0.5 teaspoon of black pepper, and 1 teaspoon of smoked paprika. Ensure the seasoning gets into the slashes and cavity of the fish.
