  • 1 cup Bread flour
  • 1.5 cups Warm water
  • 3 tablespoons Honey
  • 2.25 teaspoons Active dry yeast
  • 1.5 teaspoons Salt
  • 2 tablespoons Olive oil
  • 2 tablespoons Rolled oats (optional, for topping)

Directions

Step 1

In a small bowl, dissolve the honey in the warm water (ensure it is between 105°F and 115°F) and sprinkle the active dry yeast on top. Let it sit for 5–10 minutes until it becomes foamy.

Step 2

In a large mixing bowl, combine the whole wheat flour, bread flour, and salt.

Step 3

Add the yeast mixture and olive oil into the bowl with the dry ingredients. Stir until the dough begins to come together.

Transfer the dough to a lightly floured surface and knead for about 8–10 minutes until the dough is smooth and elastic.

Lightly grease a large bowl with a bit of olive oil, place the dough in the bowl, and cover it with a damp towel or plastic wrap. Let it rise in a warm place for 1–1.5 hours, or until it has doubled in size.
