Ingredients

  • 1.5 cups whole wheat flour
  • 0.5 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons ground ginger
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 2 large eggs
  • 0.5 cups unsweetened applesauce
  • 0.5 cups plain Greek yogurt
  • 0.5 cups light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1.5 cups fresh blackberries
  • 2 tablespoons rolled oats (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease lightly with cooking spray.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, cinnamon, nutmeg, ginger, baking powder, baking soda, and salt.

Step 3

In a separate medium bowl, whisk together the eggs, applesauce, Greek yogurt, brown sugar, and vanilla extract until smooth and well combined.

Step 4

Slowly pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix as this can lead to dense muffins.

Step 5

Gently fold in the fresh blackberries until evenly distributed throughout the batter.

Step 6

Divide the batter evenly among the muffin cups, filling each about 3/4 full. For a decorative touch, sprinkle the tops with rolled oats if desired.

Step 7

Bake in the preheated oven for 16-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store any leftovers in an airtight container for up to 3 days, or freeze for longer storage.
