  • 0.5 cup Dried fruit (such as raisins, cranberries, or chopped apricots)
  • 2 large Eggs
  • 0.75 cup Unsweetened applesauce
  • 0.5 cup Maple syrup or honey
  • 1 teaspoon Vanilla extract
  • 0.25 cup Melted coconut oil (or another neutral oil)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with liners or grease it with a little coconut oil.

In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, cinnamon, and sea salt. Stir to mix evenly.
