Ingredients

  • 2 pounds whole fish (e.g., snapper, sea bass, or grouper)
  • 0.25 cup lime juice (freshly squeezed)
  • 0.25 cup orange juice (freshly squeezed)
  • 3 tablespoons olive oil
  • 4 garlic cloves (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 red bell pepper (sliced)
  • 1 yellow onion (sliced)
  • 2 tomatoes (sliced)
  • 2 tablespoons fresh cilantro (chopped, for garnish)
  • 4 lime wedges (for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Clean and scale the fish, then pat it dry with paper towels. Make three diagonal cuts on each side of the fish to allow the marinade to penetrate.

Step 3

In a small bowl, whisk together the lime juice, orange juice, olive oil, minced garlic, cumin, paprika, salt, and black pepper.

Step 4

Place the fish on a large baking sheet or in a roasting pan. Rub the marinade generously all over the fish, including inside the cavity and into the cuts. Let it marinate for 10 minutes.

Step 5

Spread the sliced red bell peppers, yellow onion, and tomatoes around the fish. Drizzle the remaining marinade over the vegetables.

Step 6

Cover the pan with aluminum foil and bake in the preheated oven for 20 minutes.

Step 7

Remove the foil and bake for an additional 10 minutes or until the fish is cooked through and flakes easily with a fork.

Step 8

Transfer the fish to a serving platter and garnish it with fresh cilantro. Serve with lime wedges on the side.
