Ingredients

  • 3 medium zucchini
  • 2 large egg
  • 0.5 cup almond flour
  • 2 tablespoons arrowroot powder
  • 2 stalks green onion
  • 2 tablespoons fresh parsley
  • 1 teaspoon garlic powder
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons avocado oil

Directions

Step 1

Grate the zucchinis using a box grater or food processor with a shredding attachment. Place the grated zucchini into a colander or clean kitchen towel.

Step 2

Sprinkle 1/2 teaspoon of salt over the zucchini, toss to combine, and let it sit for 10 minutes to draw out excess moisture.

Step 3

After 10 minutes, squeeze the grated zucchini tightly using the kitchen towel or hands to remove as much liquid as possible. Discard the liquid.

Step 4

In a mixing bowl, combine the drained zucchini, eggs, almond flour, arrowroot powder, finely chopped green onion, parsley, garlic powder, 1/4 teaspoon salt, and black pepper. Mix until well combined.
