Ingredients

  • 4 ounces Yellowtail (sashimi-grade, thinly sliced)
  • 1 cup Cauliflower rice, cooked and cooled
  • 0.5 whole Avocado, thinly sliced
  • 0.25 cup Cucumber, julienned
  • 0.25 cup Carrot, julienned
  • 1 stalk Green onion, sliced thinly
  • 3 whole Nori sheets
  • 2 tablespoons Coconut aminos (for dipping, optional)
  • 0.5 teaspoon Sesame seeds (optional, garnish)

Directions

Step 1

Lay one nori sheet shiny-side down on a bamboo sushi mat or clean, flat surface.

Step 2

Spread 1/3 cup of the cooked and cooled cauliflower rice thinly and evenly over the entire nori sheet, leaving a 1-inch strip uncovered at the top edge.

Step 3

Add a single layer of thinly sliced yellowtail horizontally across the center of the rice.

Step 4

Top the yellowtail with a few slices of avocado, a small amount of cucumber, carrot, and a sprinkle of green onion.

Step 5

Using the bamboo mat (or your hands if you don’t have a mat), carefully roll the nori sheet from the bottom edge upward, tucking tightly to form a roll. Seal the edge by slightly moistening the exposed strip of nori with water.
