Ingredients

  • 1 medium, diced zucchini
  • 4 cups vegetable stock
  • 4 cups, packed watercress
  • 0.5 cups coconut milk
  • 1 teaspoon sea salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons, chopped fresh parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, minced garlic, and chopped celery. Sauté for 5 minutes, or until the onion is translucent and fragrant.

Add the diced zucchini and cook for another 3 minutes, stirring frequently.

Step 4
