Ingredients

  • 1 medium cooked beet, peeled and diced

  • 1 medium orange, peeled and segmented
  • 0.75 cup unsweetened coconut milk
  • 0.5 cup cold water
  • 0.5 teaspoon fresh ginger, grated
  • 1 tablespoon lemon juice
  • 3 large ice cubes

Directions

Step 1

If your beet is not already cooked, roast or steam it until tender, allow it to cool, then peel and dice into medium-sized chunks.

Step 2

In a high-speed blender, combine the diced cooked beet, frozen strawberries, and frozen raspberries.
