Ingredients

  • 3 medium carrots
  • 3 stalks celery stalks
  • 1 large yellow onion
  • 4 cloves garlic cloves
  • 1 large zucchini
  • 1 small bunch fresh parsley
  • 6 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 leaves bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon sea salt
  • 12 cups water

Directions

Step 1

Wash and roughly chop the carrots, celery, zucchini, and onion. You do not need to peel the vegetables, as the peels will add more flavor to the broth.

Step 2

Smash the garlic cloves using the flat side of a knife to release their oils.

Step 3

In a large stockpot, add the chopped vegetables, garlic, parsley, thyme, rosemary, bay leaves, peppercorns, and salt.

Pour in 12 cups of water and bring the pot to a boil over high heat.
