  • 1 Onion, finely diced
  • 2 Garlic cloves, minced
  • 1 cup Button mushrooms, finely chopped
  • 1 Carrot, grated
  • 1 Zucchini, grated and squeezed of excess liquid
  • 1 cup Sunflower seeds, ground (or use sunflower seed meal)
  • 3 tablespoons Nutritional yeast
  • 1 teaspoon Paprika
  • 0.5 teaspoon Sage, dried
  • 0.5 teaspoon Thyme, dried
  • 2 teaspoons Coconut aminos
  • 1 tablespoon Olive oil (for sautéing)
  • 1 tablespoon Coconut milk (optional for glazing)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Prepare the flax egg by mixing the ground flaxseed with 6 tablespoons of water in a small bowl. Let sit for about 10 minutes until it thickens.

Step 3

In a large skillet over medium heat, add olive oil and sauté the diced onion and minced garlic until fragrant and softened, about 3-4 minutes.

Add the finely chopped mushrooms, grated carrot, and grated zucchini. Cook until most of the moisture has evaporated, stirring occasionally, about 6-8 minutes.

Stir in the ground sunflower seeds, nutritional yeast, paprika, sage, thyme, and coconut aminos. Mix well and cook for an additional 2 minutes. Remove from heat and allow it to cool slightly.

To make the pastry dough, combine almond flour, tapioca starch, and salt in a bowl. Add the coconut oil and flax egg, then mix until a dough forms. If the mixture is too crumbly, you can add a small amount of water, one teaspoon at a time, until it holds together.

Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4-inch thick.

Spoon the cooled vegetable mixture lengthwise along the center of the dough rectangle. Fold one side of the dough over the filling, then the other side, pressing the seam gently to seal.

Cut the log into 12 equal pieces and place them seam-side down onto the lined baking sheet.

If desired, brush the tops with a little coconut milk for a golden finish.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and firm.
