  • 1 teaspoon Sea salt
  • 2 tablespoons Olive oil
  • 1.25 cups Warm water

  • 0.5 cup Cooked and crumbled Italian sausage (sugar-free, Whole30 compliant)
  • 0.25 cup Fresh basil leaves
  • 0.5 cup Cherry tomatoes (halved)
  • 1 cup Arugula
  • 1 teaspoon Balsamic vinegar (Whole30 compliant)

Directions

Step 1

Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the cassava flour, almond flour, tapioca starch, baking powder, and sea salt.

Step 3

Add the olive oil and warm water to the dry ingredients and mix until a sticky dough forms.

Step 4

Transfer the dough to a lightly floured surface (use cassava flour) and knead gently for 2-3 minutes until smooth.

Step 5

Divide the dough into two portions and shape each into an oval, about 1/2-inch thick, to create the traditional pinsa shape.

Step 6

Place the dough ovals on the prepared baking sheet and bake for 8-10 minutes until lightly golden and firm.

Step 7

Remove the crusts from the oven and spread the tomato sauce evenly over each.

Step 8

Top with cooked sausage, cherry tomatoes, and return to the oven for an additional 8-10 minutes, until heated through.

Step 9

Remove from the oven and top with fresh basil leaves and arugula.

Step 10

Drizzle with balsamic vinegar just before serving.
